菠菜醬義大利螺旋麵


菠菜醬義大利螺旋麵

材料:
400g螺旋麵225g嫩菠菜、大蒜瓣一顆
250g馬士卡澎起士(mascarpone)、半顆檸檬汁
30g帕梅森起士(parmesan)及份量外灑於義大利麵上用
55g松子(乾鍋略焙炒)



法:
依照包裝袋操作指南烹煮義大利麵
將半份量菠菜、蒜、馬士卡澎、檸檬汁、帕梅森放入食物處理機中研磨成醬(另半份量菠菜撕成適當大小煮熟備用)
螺旋麵徹底瀝乾,置入炒鍋中,以小火加熱
拌入青醬、松子及菠菜
灑上份量外帕梅森起士即可上桌


Green spinach sauce with fusilli

Ingredients:
400g fusilli pasta spirals,  225g of baby spinach
1 garlic clove,  250g mascarpone,  ½ of large lemon juice
30g grated Parmesan, plus extra to serve
55g pine nuts, lightly toasted

Method:
Cook the pasta following pack instructions. Meanwhile put half the spinach in a food processor with the garlic, mascarpone, lemon juice and Parmesan, then whisk to a smooth sauce.
Drain the pasta thoroughly and return to the pan over a low heat. Stir in the sauce, pine nuts and remaining spinach, until the spinach has just wilted. Season and serve with extra Parmesan sprinkled over.
