韓式涼拌茄子



茄子是很好的食物,具高營養價值,常吃据說可增強體內抗氧化物的活性,降低自由基,達到抗衰老的作用,有長壽蔬菜之稱。

小菜 -- 韓式涼拌茄子

材料:
140-150g洗淨並除去蒂頭、1 tbsp洋葱(切小丁)
1顆蒜瓣(切碎)、1tbsp綠辣椒(切碎)
1tbsp紅辣椒(切碎)、青葱1支(切碎)
2 tsp塩、1 tsp糖、1/2 tsp辣椒粉、1/2 tsp醬油
1 tsp蘋果or白醋、1杯冰開水、6-7個冰塊
2 tsp芝麻(焙炒過後略壓碎)

做法:
茄子洗淨並去除蒂頭,切成約5cm長,對半切
燒開1 1/2杯水,茄子置於蒸籠蒸約3分鐘,待涼備用





將放涼之茄子以手撕成一口大小或你想要的大小後置入碗中





將其餘食材依序放入碗中





將冰水加入略拌,加入冰塊,於其上飾以芝麻即可食用










Tips:可以檸檬取代醋,更增一分清香




Gajinaengguk (Cold eggplant soup side dish)

Ingredients:
140-150g eggplant, washed and removed the tops
1 tbsp chopped onion
1 garlic clove, minced
1 tbsp chopped green chili pepper
1 tbsp chopped red chili pepper
1 stalk of green onion, chopped
2 tsp salt
1 tsp sugar
½ tsp hot pepper flakes
½ tsp soy sauce
1 tbsp apple or white vinegar
1 cup of cold water
6-7 ice cubes
2 tsp sesame seeds, toast and crush.

Directions:
Rinse an eggplant and remove the stem from the top.
Cut it into 5cm pieces, then cut each piece in half lengthwise.
Boil 1½ cups of water into a steamer. When it starts boiling, add the eggplant and steam for 3 minutes.
Remove the eggplant from the heat and let it cool down.
Tear each piece of eggplant into bite size pieces with your fingers or cut with a knife. The desirable size of each piece is ½ inch x 2 inches.
Add it to a serving bowl that holds 2½ to 3 cups of liquid.
Combine with onion, garlic, green and red chili pepper, green onion, salt, sugar, hot pepper flakes, soy sauce, and vinegar.
Add 1 cup of icy cold water and mix well with a spoon. Add some more ice cubes to make it colder.
Add crushed or ground sesame seeds on top and serve immediately with rice and a few more side dishes.
