日式味醂牛肉煮
材料:
1 tbsp糖、洋葱一顆切片備用、½ tbsp醃薑(可省略)
葱珠3支、紅辣椒1支切細備用
做法:
取一鍋,倒入高湯、醬油、味醂、糖煮至略滾,加洋葱煮約5分鐘
加牛肉片煮熟,加薑、葱珠、辣椒略拌炒,起鍋淋於飯上即可

mirin-poached beef
Ingredients:
3 tbsp soy sauce; 5 tbsp
mirin; 1 tbsp golden caster sugar
3 spring onions , finely chopped; 1 red chilli , thinly sliced
steamed rice , to serve
method:
Put the meat in the freezer while you prepare the other
ingredients (this will help when slicing). Combine the stock, soy, mirin and
sugar in a pan, bring to a boil, then turn down to a simmer. Add the onion and
cook for 5 minutes.
Meanwhile, slice the meat as thinly as you can. add the beef to
the pan and cook for a few more minutes, stirring, until opaque. Sprinkle with
pickled ginger, spring onions and chilli, and serve with steamed rice and some
of the cooking liquid spooned over.
